Telangana Style Mutton Bagara Rice Recipe – A Royal One-Pot Feast

Telangana Style Mutton Bagara Rice is a fragrant and flavourful dish that combines tender mutton, aromatic basmati rice, and a rich blend of traditional spices. A staple at weddings, festive gatherings, and special occasions across Telangana and Hyderabad, Bagara Rice is known for its subtle spice profile and irresistible aroma. Traditionally served with mutton curry, dalcha, or mirchi ka salan, this dish is a true celebration of Telangana cuisine.

Ingredients

For Mutton

  • 500 g mutton, cleaned
  • 1 tbsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • Salt to taste
  • ½ cup curd

For Bagara Rice

  • 2 cups basmati rice, soaked for 30 minutes
  • 3 tbsp Freedom Refined Sunflower Oil
  • 2 onions, thinly sliced
  • 4 green chillies, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp shah jeera
  • 2 bay leaves
  • 4 cloves
  • 2 green cardamoms
  • 1-inch cinnamon stick
  • ¼ cup mint leaves
  • ¼ cup coriander leaves
  • 4 cups water
  • Salt to taste
  • Fried onions for garnish

Method

Step 1: Marinate and Cook the Mutton

Mix mutton with curd, ginger-garlic paste, turmeric, red chilli powder, and salt. Marinate for at least 30 minutes.

Step 2:

Pressure cook the marinated mutton until tender and set aside along with the stock.

Step 3: Prepare the Bagara Base

Heat Freedom Refined Sunflower Oil in a heavy-bottomed pan or cooker.

Step 4:

Add shah jeera, bay leaves, cloves, cardamom, and cinnamon. Sauté until aromatic. Bagara rice gets its distinctive flavour from tempering whole spices before cooking the rice.

Step 5:

Add sliced onions and sauté until golden brown.

Step 6:

Add green chillies and ginger-garlic paste. Cook until the raw aroma disappears.

Step 7:

Add mint leaves and coriander leaves and sauté for a minute.

Step 8:

Add the cooked mutton along with its stock and mix well.

Step 9:

Pour in water, adjust salt, and bring to a boil.

Step 10:

Add the soaked basmati rice and gently mix.

Step 11:

Cover and cook on low heat until the rice is perfectly cooked and the liquid is absorbed.

Step 12:

Allow the rice to rest for 10 minutes before fluffing gently with a fork.

Step 13:

Garnish with fried onions and fresh coriander leaves.
