Andhra Chilli Chicken Fry Recipe – Spicy Restaurant-Style Chicken Fry
Andhra Chilli Chicken Fry is a fiery and flavour-packed dish famous for its bold spice levels, aromatic curry leaves, and juicy chicken pieces coated in a rich chilli masala. A popular favourite across Andhra Pradesh and Telangana, this dish is often served as a starter, side dish, or weekend special alongside rice, chapati, or biryani. Ingredients
For Marination
- 500 g boneless chicken, cut into bite-sized pieces
- 1 tbsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 2 tbsp curd
- 1 tbsp lemon juice
- Salt to taste
For Chilli Fry
- 3 tbsp Freedom Refined Sunflower Oil
- 2 onions, finely sliced
- 8–10 green chillies
- 2 sprigs curry leaves
- 1 tsp cumin seeds
- 1 tbsp ginger-garlic paste
- ½ tsp black pepper powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Fresh coriander leaves for garnish
Method
Step 1:
Mix chicken with ginger-garlic paste, turmeric powder, red chilli powder, curd, lemon juice, and salt. Marinate for at least 30 minutes.
Step 2:
Grind green chillies with a few coriander leaves and a little ginger-garlic paste into a coarse paste.
Step 3:
Heat Freedom Refined Sunflower Oil in a heavy-bottomed pan.
Step 4:
Add cumin seeds and curry leaves. Sauté until aromatic.
Step 5:
Add sliced onions and cook until golden brown.
Step 6:
Add ginger-garlic paste and sauté until the raw smell disappears.
Step 7:
Add the prepared green chilli paste and cook for 2–3 minutes until fragrant.
Step 8:
Add the marinated chicken and cook on medium-high heat.
Step 9:
Cover and cook until the chicken becomes tender and releases its moisture.
Step 10:
Add coriander powder, black pepper powder, and garam masala.
Step 11:
Cook uncovered until the masala coats the chicken completely and the dish turns semi-dry. Andhra-style chicken fry is traditionally cooked until the masala clings to the chicken pieces.
Step 12:
Garnish with fresh coriander leaves and a few fried curry leaves.
