Santula
Ingredients
- 100 gms Raw Papaya
- 50 gms Brinjal (eggplant)
- 50 gms Potato
- 30 gms Tomato
- 10 gms Ginger
- 1 Green Chili
- 5 Curry Leaves
- 7 gms Mustard Oil
- Salt and Turmeric to taste
- Fresh Coriander for garnish
Directions
- Peel and chop papaya, potato, and brinjal into small pieces.
- Boil all vegetables with turmeric and salt until soft.
- Heat mustard oil in a pan, add ginger, chopped green chili, and curry leaves.
- Add boiled vegetables to the tempering and sauté for 3-4 minutes.
- Mash lightly and mix well.
- Garnish with fresh coriander.
- Santula is ready to serve as a nutritious side dish.
