Ingredients
- 500 g mutton, cleaned and cut into pieces
- 3 tbsp Freedom Kachi Ghani Mustard Oil
- 2 large onions, finely sliced
- 2 tomatoes, finely chopped
- 2 tbsp ginger-garlic paste
- 3–4 green chillies, slit
- ½ cup curd
- 1 tsp turmeric powder
- 2 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- 1 tsp garam masala
- 2 bay leaves
- 4 cloves
- 2 green cardamoms
- 1-inch cinnamon stick
- Salt to taste
- Fresh coriander leaves for garnish
- Water as required
Method
Step 1:
Wash the mutton thoroughly and marinate it with curd, turmeric powder, half the ginger-garlic paste, and a little salt. Allow it to rest for at least 30 minutes.
Step 2:
Heat Freedom Kachi Ghani Mustard Oil in a pressure cooker or heavy-bottomed pan until it reaches smoking point. Reduce the flame slightly before cooking.
Step 3:
Add bay leaves, cloves, cardamom, and cinnamon. Sauté for a few seconds until aromatic.
Step 4:
Add sliced onions and cook until golden brown.
Step 5:
Add the remaining ginger-garlic paste and green chillies. Sauté until the raw aroma disappears.
Step 6:
Add chopped tomatoes and cook until soft and oil starts separating from the masala.
Step 7:
Mix in red chilli powder, coriander powder, cumin powder, and salt. Stir well.
Step 8:
Add the marinated mutton and cook on medium-high heat for 8–10 minutes until the pieces are well coated with the masala.
Step 9:
Add sufficient water, cover, and pressure cook for 5–6 whistles or until the mutton becomes tender.
Step 10:
Once the pressure releases, simmer the curry for 10 minutes to achieve a rich consistency.
Step 11:
Sprinkle garam masala and garnish with fresh coriander leaves.
Step 12:
Serve hot with steamed rice, bagara rice, jowar roti, or chapati.
