Chicken Pickle Recipe – Andhra Style Spicy Chicken Pickle

Chicken Pickle is a fiery and flavourful Andhra delicacy that combines succulent chicken pieces with aromatic spices, tangy seasonings, and traditional pickling techniques. Packed with bold flavours and a rich texture, this pickle pairs perfectly with hot steamed rice, chapati, dosa, or curd rice. Ingredients

  • 500 g chicken, cleaned and cut into small pieces
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tbsp red chilli powder
  • 1 tbsp mustard powder
  • ½ tsp fenugreek powder
  • Salt to taste
  • 3 tbsp lemon juice
  • 10 garlic cloves, peeled
  • Curry leaves, a handful
  • 3–4 dry red chillies
  • Freedom Kachi Ghani Mustard Oil for frying and pickling

Method

Step 1: Wash and clean the chicken thoroughly. Pat dry to remove excess moisture.

Step 2: Marinate the chicken with turmeric powder, salt, and 1 tablespoon ginger-garlic paste. Allow it to rest for 30 minutes.

Step 3: Cook the marinated chicken until the excess moisture evaporates completely.

Step 4: Heat Freedom Kachi Ghani Mustard Oil in a deep pan. Fry the chicken pieces until lightly golden and cooked through. Remove and set aside.

Step 5: In the remaining oil, sauté the remaining ginger-garlic paste until the raw aroma disappears.

Step 6: Add red chilli powder, mustard powder, fenugreek powder, and salt. Mix well over a low flame.

Step 7: Add the fried chicken pieces and toss until they are evenly coated with the spice mixture.

Step 8: Allow the mixture to cool slightly before adding lemon juice. Mix thoroughly.

Step 9: In a separate pan, heat a little Freedom Kachi Ghani Mustard Oil. Add garlic cloves, dry red chillies, and curry leaves. Fry until aromatic.

Step 10: Pour the tempering over the chicken mixture and combine well.

Step 11: Cool completely before transferring the pickle into a clean, dry, airtight container.
