Ingredients :

  • 1 cup basmati rice
  • 1 inch cinnamon stick
  • 1/2 teaspoon chopped peppercorns
  • 1 teaspoon powdered red chilli
  • 2 cups water
  • 1 medium diced onion
  • 1 teaspoon clove
  • 2 black cardamom
  • 1 teaspoon salt
  • 1 teaspoon oil
  • 1/2 cup chopped carrots
  • 1/2 cup beans
  • 1/2 cup chopped peas

Method :

  • Wash the basmati rice thoroughly and soak it in water for 20–30 minutes. Drain and keep it aside.
  • Heat 1 teaspoon of Freedom Sunflower Oil in a non-stick pan over medium heat.
  • Add the chopped onions and sauté until they become soft and light golden.
  • Add the cinnamon stick, cloves, black cardamom, and peppercorns.
  • Sauté for a minute until the spices become aromatic.
  • Mix in the chopped carrots, beans, and peas.
  • Add about ¼ cup of water, cover, and cook for 5–8 minutes until the vegetables are slightly tender.
  • Add the soaked basmati rice, red chilli powder, and salt.
  • Gently stir so the rice is evenly coated with the spices without breaking the grains.
  • Pour in 2 cups of water and bring the mixture to a rolling boil.
  • Once it starts boiling, reduce the flame to low, cover the pan, and cook for about 8–10 minutes or until the rice is perfectly cooked and all the water has been absorbed.
  • Turn off the heat and let the pulao rest for 5 minutes before fluffing it gently with a fork.
  • Serve the hot Veg Pulao with boondi raita, cucumber raita, pickle, or papad for a wholesome and flavourful meal.
