Ingredients:
Vanilla Cupcakes
1-2/3 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1/4 cup sour cream
3/4 cup milk
2 teaspoons vanilla essence
1 cup granulated sugar
1/2 cup unsalted butter melted and slightly cooled
Buttercream Frosting
3/4 cup unsalted butter
3-4 cups confectioners sugar
2 teaspoons vanilla essence
3 tablespoons milk
Pinch of kosher salt
How to Make?
- Vanilla Cupcakes
- Preheat microwave oven to 350 degrees F. Line a cupcake pan with 12 liners.
- Whisk flour, baking powder and salt together in a bowl.
- Whisk sugar and melted butter until smooth (mixture will be gritty) in another bowl. Then whisk in eggs, sour cream, milk and vanilla essence until they are completely blended.
- Gradually add in dry ingredients and beat until thoroughly incorporated. The batter should become thick.
- Fill cupcake lines, around two-thirds of the way full. Bake in the oven for 20 minutes or until a toothpick inserted in the centre comes out clean.
- Cool them before you do the frosting.
- Vanilla Buttercream Frosting
- Beat butter at medium speed until smooth and creamy for 2-3 minutes.
- Combine confectioners sugar, vanilla and milk and mix them in high speed for 3 minutes until you get a decent consistency.
- Now you may frost cooled cupcakes using a piping bag.
