Gutti Vankaya Recipe – Authentic Andhra Stuffed Brinjal Curry

Gutti Vankaya, also known as Stuffed Brinjal Curry, is one of the most loved dishes in Andhra cuisine. This traditional recipe features tender baby brinjals stuffed with a rich masala made from peanuts, sesame seeds, coconut, and aromatic spices, then slow-cooked to perfection. The combination of nutty, spicy, and tangy flavours makes it a perfect accompaniment to steamed rice, ghee rice, jowar roti, or chapati. Authentic Andhra-style Gutti Vankaya is known for its peanut-sesame-coconut stuffing and tamarind-based gravy.

Ingredients

For the Brinjals

  • 10 small baby brinjals (vankaya)
  • 3 tbsp Freedom Double Filtered Groundnut Oil

For the Stuffing Masala

  • ¼ cup peanuts
  • 2 tbsp white sesame seeds
  • 3 tbsp grated dry coconut
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 4 dry red chillies
  • ½ tsp turmeric powder
  • 1 small onion, chopped
  • Salt to taste

For the Gravy

  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tbsp ginger-garlic paste
  • Small lemon-sized tamarind ball soaked in warm water
  • 1 sprig curry leaves
  • ½ tsp mustard seeds
  • Water as required
  • Fresh coriander leaves for garnish

Method

Step 1:

Dry roast peanuts, sesame seeds, dry coconut, coriander seeds, cumin seeds, and red chillies until aromatic.

Step 2:

Allow the mixture to cool and grind it along with onion, turmeric, and salt into a thick masala paste. Peanut, sesame, and coconut are the signature ingredients that give Gutti Vankaya its rich flavour.

Step 3:

Wash the baby brinjals and make four slits from the bottom, keeping the stem intact.

Step 4:

Stuff the prepared masala carefully into each brinjal and keep aside.

Step 5:

Heat Freedom Double Filtered Groundnut Oil in a deep pan.

Step 6:

Add mustard seeds and curry leaves. Allow them to splutter.

Step 7:

Add chopped onions and sauté until golden brown.

Step 8:

Add ginger-garlic paste and cook until the raw aroma disappears.

Step 9:

Add tomatoes and cook until soft and mushy.

Step 10:

Arrange the stuffed brinjals gently in the pan and cook on low flame for 5–7 minutes.

Step 11:

Extract tamarind pulp and add it along with the remaining stuffing masala.

Step 12:

Add water as required, cover, and simmer for 15–20 minutes until the brinjals become tender and the gravy thickens. Traditional Gutti Vankaya is slow-cooked until the brinjals absorb the flavours of the stuffing and gravy.

Step 13:

Garnish with fresh coriander leaves and serve hot.
