Egg Puff Recipe – Bakery-Style Crispy Egg Puffs

Egg Puffs are a beloved South Indian bakery snack featuring flaky puff pastry filled with a spicy onion masala and a perfectly cooked boiled egg. Crispy, buttery, and packed with flavour, these bakery-style puffs are a favourite accompaniment to evening tea and make a delicious snack for any occasion. Traditional egg puffs are known for their golden layers and savoury filling that combines caramelized onions with aromatic spices.

Prepared using Freedom Rice Bran Oil, the masala filling develops rich flavour while maintaining a light texture. Rice bran oil’s versatility makes it ideal for sautéing the aromatic onion mixture that gives these puffs their signature taste.

Ingredients

For the Filling

  • 4 eggs, hard-boiled and halved
  • 2 large onions, thinly sliced
  • 1 tomato, finely chopped
  • 1 tsp ginger-garlic paste
  • ½ tsp red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1½ tbsp Freedom Rice Bran Oil

For the Puffs

  • 1 packet puff pastry sheets
  • 1 egg yolk (for brushing, optional)

Method

Step 1

Heat Freedom Rice Bran Oil in a pan and sauté the sliced onions until soft and golden brown.

Step 2

Add ginger-garlic paste and cook until the raw aroma disappears.

Step 3

Add chopped tomatoes, red chilli powder, coriander powder, turmeric powder, and salt. Cook until the mixture becomes thick and flavourful. The classic egg puff filling is made with a spicy onion-tomato masala.

Step 4

Allow the masala filling to cool completely.

Step 5

Cut the puff pastry sheets into equal squares.

Step 6

Place a spoonful of the onion masala in the centre of each pastry square.

Step 7

Place half a boiled egg over the masala filling.

Step 8

Fold the pastry corners towards the centre and seal gently to form a puff shape.

Step 9

Brush the top with egg yolk for a glossy golden finish if desired.

Step 10

Preheat the oven to 200°C.

Bake for 20–25 minutes or until the puffs become golden, flaky, and crisp. Bakery-style egg puffs are typically baked until the pastry is crisp and golden brown.

Step 12

Remove from the oven and allow them to cool slightly before serving.
