Mangalore Special Buns Recipe – Soft & Fluffy Banana Buns
Mangalore Special Buns, also known as Banana Buns or Banana Poori, are a beloved breakfast and tea-time snack from the coastal regions of Karnataka. Made with ripe bananas, flour, curd, and a hint of cumin, these golden-brown buns are mildly sweet, soft on the inside, and beautifully puffed when fried. Traditionally served with coconut chutney or vegetable sagu, they are a must-try delicacy from Mangalore and Udupi cuisine.

Ingredients
- 2 ripe bananas
- 3 tbsp sugar
- ¼ cup curd
- 1 tsp cumin seeds
- ½ tsp baking soda
- ½ tsp salt
- 2½ cups maida (all-purpose flour)

Method
Step 1: In a large mixing bowl, mash the ripe bananas until smooth.
Step 2: Add sugar and mix well until combined.
Step 3: Add curd, cumin seeds, baking soda, and salt. Stir well.
Step 4: Gradually add maida and knead into a soft dough.
Step 5: Cover the dough and allow it to rest for 4–8 hours or overnight for the best texture and flavour.
Step 6: Divide the dough into equal portions and roll them into small balls.
Step 7: Dust lightly with flour and roll each portion into a medium-thick poori.
Step 8: Heat Freedom Refined Sunflower Oil in a deep frying pan.
Step 9: Carefully slide the rolled buns into the hot oil and fry on medium heat.
Step 10: Gently press with a slotted spoon to help them puff up.
Step 11: Fry until both sides turn golden brown and crisp.
Step 12: Remove and drain excess oil on absorbent paper.
Step 13: Serve hot with coconut chutney, vegetable sagu, or a cup of tea.
