Ingredients
For the Jamuns
- 2 cups sweet potatoes, boiled and mashed
- 2 tbsp all-purpose flour (maida)
- A pinch of salt
- 2–3 tbsp sugar
- Freedom Refined Sunflower Oil, for deep frying
For the Sugar Syrup
- 2 cups sugar
- 1 cup water
- 2 cardamom pods, crushed
- A few drops of rose water (optional)
- A pinch of saffron (optional)
- Pistachios, finely chopped for garnish
Method
Preparing the Sugar Syrup
Step 1: Add sugar and water to a saucepan and bring to a boil.
Step 2: Simmer for 5–7 minutes until the syrup becomes slightly sticky.
Step 3: Add crushed cardamom, rose water, and saffron. Mix well and keep the syrup warm.
Preparing the Jamuns
Step 1: Mash the boiled sweet potatoes until completely smooth and free of lumps.
Step 2: Add maida and a pinch of salt. Mix and knead gently to form a soft dough.
Step 3: Divide the dough into small portions and roll into smooth balls.
Step 4: Heat Freedom Refined Sunflower Oil in a deep frying pan over low to medium heat.
Step 5: Carefully fry the sweet potato balls until they turn evenly golden brown, stirring gently for uniform colour.
Step 6: Remove and drain briefly on absorbent paper.
Step 7: Transfer the warm jamuns directly into the warm sugar syrup and allow them to soak for 20–30 minutes.
Step 8: Garnish with chopped pistachios before serving.
