Stir-Fried Broccoli with Coconut Flavours

INGREDIENTS
1 large bunch of broccoli
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons + 1 teaspoon Freedom Groundnut Oil
1 spring onion, chopped
2–3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger(about 2 teaspoons), peeled and chopped or grated
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted oil
METHOD
- Prepare the broccoli: Cut the florets into 1–1.5-inch pieces. Peel the stalks and slice diagonally into 1/4-inch pieces. Keep aside.
- In a small bowl, whisk together 1/2 cup water, soy sauce, cornstarch, and sugar. Set aside.
- Heat a large wok over a high flame.
- Add 2 tablespoons of Freedom Groundnut Oil and swirl to coat the wok evenly.
- Once the oil starts smoking, add broccoli florets and stems. Stir fry continuously until lightly browned on the edges (about 2 minutes).
- Add 2 tablespoons of water to steam the broccoli and cook for another 2 minutes until tender yet crisp.
- Push the broccoli to the sides, creating a well in the centre. Add the remaining 1 teaspoon Groundnut Oil, spring onions, garlic, ginger, and red pepper flakes. Stir for 30–45 seconds until aromatic.
- Pour in the soy sauce mixture and toss well until the sauce thickens and coats the broccoli evenly (about 30 seconds).
- Switch off the heat, add the toasted oil, toss gently, and serve hot.
