Ingredients
- 100 gms pumpkin, peeled and cubed
- 50 gms potato, peeled and cubed
- 50 gms raw banana, peeled and cubed
- 10 gms mustard seeds, soaked
- 5 gms poppy seeds
- 5 gms cumin seeds
- 1 dry red chilli
- 7 gms mustard oil
- 1 tsp tamarind pulp
- Turmeric powder, as required
- Salt to taste
Method
Step 1: Wash and cut the pumpkin, potato, and raw banana into medium-sized cubes. Boil them with turmeric and salt until they are tender but not mushy. Drain and keep aside.
Step 2: Grind the soaked mustard seeds, poppy seeds, cumin seeds, and dry red chilli into a smooth paste using a little water.
Step 3: Heat mustard oil in a pan until it reaches its smoking point. Reduce the heat slightly and add the prepared mustard paste. Sauté for about a minute until aromatic.
Step 4: Add the boiled vegetables to the pan and gently mix so that they are evenly coated with the mustard mixture.
Step 5: Stir in the tamarind pulp and cook on a low flame for 3–4 minutes, allowing the flavours to blend beautifully.
Step 6: Adjust the seasoning if required and cook until the gravy lightly coats the vegetables.
Step 7: Remove from heat and serve hot.
