Ingredients

  • 100 gms Raw Papaya
  • 50 gms Brinjal (eggplant)
  • 50 gms Potato
  • 30 gms Tomato
  • 10 gms Ginger
  • 1 Green Chili
  • 5 Curry Leaves
  • 7 gms Mustard Oil
  • Salt and Turmeric to taste
  • Fresh Coriander for garnish

Directions

  • Peel and chop papaya, potato, and brinjal into small pieces.
  • Boil all vegetables with turmeric and salt until soft.
  • Heat mustard oil in a pan, add ginger, chopped green chili, and curry leaves.
  • Add boiled vegetables to the tempering and sauté for 3-4 minutes.
  • Mash lightly and mix well.
  • Garnish with fresh coriander.
  • Santula is ready to serve as a nutritious side dish.
