Chole Bhature is one of India’s most loved dishes, featuring soft, fluffy deep-fried bhature paired with a rich and flavourful chickpea curry. Ingredients

For Bhature

  • 1 cup maida (all-purpose flour)
  • 1 pinch salt
  • 1 pinch baking powder
  • Freedom Refined Sunflower Oil, for deep frying

For Chole

  • 100 g Kabuli chana (chickpeas), boiled
  • 1 tbsp tomato, chopped
  • 1 onion, finely chopped
  • 1 tbsp potato, boiled and diced
  • ½ tsp chilli powder
  • ½ tsp ginger-garlic paste
  • ¼ tsp turmeric powder
  • ¼ tsp garam masala
  • Salt to taste
  • Fresh coriander, mint, and green chilli for garnish

Method

Preparing the Bhature

Step 1: In a bowl, combine maida, salt, and baking powder. Add water as required and knead into a soft dough.

Step 2: Cover and allow the dough to rest for 5 minutes.

Step 3: Divide the dough into small portions and roll them into circular discs.

Step 4: Heat Freedom Refined Sunflower Oil in a deep frying pan and fry the bhature until they puff up and turn golden brown on both sides. Remove and keep aside.

Preparing the Chole

Step 1: Heat 2 tablespoons of Freedom Refined Sunflower Oil in a pan.

Step 2: Add the chopped onions and sauté until translucent.

Step 3: Add the ginger-garlic paste and cook for a minute. Stir in turmeric powder, chilli powder, salt, and chopped tomatoes.

Step 4: Cook for 2 minutes until the tomatoes soften and the spices blend well.

Step 5: Add the boiled chickpeas and diced potatoes. Mix thoroughly and cook for another 2 minutes.

Step 6: Pour in ½ cup water and add garam masala. Stir well.

Step 7: Simmer for 5 minutes until the curry thickens and the flavours meld together.

Serving

Garnish the chole with freshly chopped coriander, mint leaves, and green chilli.
