Aloo Gobi is a traditional North Indian curry made with tender potatoes, cauliflower, green peas, and aromatic spices. This hearty vegetarian dish is known for its comforting flavours, vibrant colours, and satisfying texture. Perfect for everyday meals, Aloo Gobi pairs beautifully with hot rotis, parathas, or steamed rice, making it a family favourite across generations.
Prepared using Freedom Refined Sunflower Oil, the vegetables cook evenly while developing a delicious golden crust. The light texture of the oil allows the natural flavours of the vegetables and spices to shine through, creating a wholesome and flavourful curry that’s perfect for any meal.
Ingredients
- 250 g cauliflower (gobi), parboiled
- 1 large potato, chopped
- ¼ cup boiled green peas
- 1 small onion, sliced
- 1 tomato, chopped
- 2 green chillies, slit
- 3 cloves garlic, minced
- Curry leaves
- 1 tsp coriander powder
- 1 tsp cumin (jeera) powder
- 1 tsp red chilli powder
- ½ tsp garam masala powder
- ½ tsp turmeric powder
- Salt to taste
- 2 tbsp Freedom Refined Sunflower Oil
- Fresh coriander leaves for garnish
Method
Step 1: Heat 1 tablespoon of Freedom Refined Sunflower Oil in a pan. Add the potatoes, cauliflower, and green peas. Sauté until the potatoes and cauliflower develop a light golden-brown crust.
Step 2: Remove the vegetables from the pan and keep them aside.
Step 3: Add the remaining oil to the same pan. Add garlic, curry leaves, green chillies, and sliced onions. Sauté until the onions turn golden brown.
Step 4: Add coriander powder, cumin powder, red chilli powder, turmeric powder, and salt. Sauté for a few seconds until fragrant.
Step 5: Add the chopped tomatoes and cook for 2–3 minutes until they become soft and mushy.
Step 6: Return the sautéed potatoes, cauliflower, and peas to the pan. Mix well so the vegetables are evenly coated with the masala.
Step 7: Add ½ cup water, cover, and cook for 5 minutes on a medium flame until the vegetables are tender and the flavours are well combined.
Step 8: Sprinkle garam masala and garnish with freshly chopped coriander leaves. Simmer for another minute before switching off the heat.
