Chattai Samosa is a unique and eye-catching variation of the traditional samosa, featuring a delicious spiced potato and green pea filling wrapped in an intricately woven pastry lattice. Known for its crispy texture and attractive presentation, this snack is perfect for festive celebrations, tea-time gatherings, parties, or special occasions. Every bite delivers a delightful combination of crunchy pastry and flavourful masala filling.

Prepared using Freedom Refined Sunflower Oil, Chattai Samosas cook to a perfectly crisp golden brown while retaining their delicious filling. The light texture of the oil helps achieve the ideal crunch, making this traditional snack even more irresistible.

Ingredients

For the Dough

  • 1½ cups all-purpose flour (maida)
  • 3 tbsp ghee or oil
  • 1 tsp ajwain
  • Salt to taste
  • Water, as required

For the Filling

  • 3 medium potatoes, boiled and mashed
  • ½ cup green peas
  • ½ tsp cumin seeds
  • 1 medium onion, sliced
  • 1 tbsp ginger-garlic paste
  • ½ tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp garam masala powder
  • ½ tsp black pepper powder
  • 1 tsp dry mango powder (amchur)
  • 2 tbsp coriander leaves, finely chopped
  • Salt to taste
  • Freedom Healthy Oil, for frying

Method

Preparing the Dough

Step 1: In a large bowl, combine maida, ajwain, salt, and ghee or oil.

Step 2: Mix well until the flour resembles breadcrumbs.

Step 3: Gradually add water and knead into a soft, smooth dough.

Step 4: Cover and let the dough rest for 20 minutes.

Preparing the Filling

Step 1: Heat a little Freedom Healthy Oil in a pan and add cumin seeds.

Step 2: Add the sliced onions and sauté for about 2 minutes until soft.

Step 3: Stir in the ginger-garlic paste and cook until the raw aroma disappears.

Step 4: Add the mashed potatoes and green peas.

Step 5: Mix in red chilli powder, coriander powder, garam masala, black pepper powder, dry mango powder, and salt.

Step 6: Cook for 2–3 minutes, stirring well to combine all the flavours.

Step 7: Add chopped coriander leaves and mix well. Allow the filling to cool completely.

Preparing the Chattai Samosa

Step 1: Divide the dough and roll it into thin sheets.

Step 2: Cut the dough into two long rectangular strips.

Step 3: Place one rectangle over the other and add a spoonful of filling in the centre.

Step 4: Fold one side over the filling, followed by the opposite side, leaving the remaining edges exposed.

Step 5: Cut the exposed edges into thin, equal strips.

Step 6: Apply a little water and begin weaving the strips alternately to create the signature “chattai” (mat-like) pattern.

Step 7: Seal the ends firmly using water.

Step 8: Heat Freedom Refined Sunflower Oil in a pan and shallow fry the samosas over a medium flame until crisp and golden brown on all sides.

Step 9: Remove and drain on absorbent paper.
