Authentic Mexican Vegetarian Tacos

Gift your loved ones the incredible taste of Tacos loaded with Vegetable fibre and protein.

Ingredients

6 tortillas
2 tbspFreedom refined sunflower oil
3 cloves garlic
1 can black beans
1 tsp cumin
salt
pepper
8 tbsp cream cheese
1 lime (for garnish)
2 onions
1 bell pepper, red
For the Pico de Gallo de Mango:
1 avocado
½ mango
1 onion
2 tomatoes
½ lime (juiced)
5 sprigs cilantro/coriander

Optional:

hot sauce like sriracha

How to Make?

The bean filling:
  • Chop onion into thin rings and then cut the bell pepper, thin and long. Add Freedom refined sunflower oil into a pan and then pepper, onion and garlic. Saute for 5 minutes.
  • Add black beans, mix and season with cumin, salt and pepper. Cook for 5 minutes and remove from the flame.
Pico de Gallo:

Peel the avocado and mash it in another bowl. Chop the onion finely and cut the tomatoes and mango into little cubes and add to the bowl. Season with lime, salt and chopped cilantro/coriander

Final steps:

Hang the tortillas over the wires in your oven for 5 mins.
Take a tortilla, fill it with the bean mix you made, add Pico de Gallo on top. Add cream cheese, lime juice, cilantro or coriander and a spicy sauce of your choice and relish this Mexican delicacy!
