Aamras Recipe

The glorious mango season is back and if you don’t try this classic mango recipe as an accompaniment for hot and crisp pooris or parathas, then you are definitely missing on something divine!

INGREDIENTS
  • 4-5 mangoes (rasaal)
  • ½ tsp cardamom powder (optional)
  • ½ tsp ghee (optional, but tastes best with this recipe)
  • Sugar as per taste
  • Malai (optional)
METHOD

Step 1

Pick the mangoes which have started wrinkling, as they are the best for making Aamras – chill in the fridge for a few hours

Step 2

Take it out of the fridge and massage the fruit with its skin on

Step 3

Gently squeeze out the pulp and beat up with whisker well to form a thick, pulpy but easy to pour consistency

Step 4

Now add cardamom powder and malai, whisk everything well – add sugar only if needed

Step 5

Serve in glass bowls or small glasses and top with some melted ghee! Delicious Aamras is now ready to be served with hot pooris, parathas or just as it is!
