Here’s an easy step by step Traditional Christmas Cake recipe for you!
INGREDIENTS :
- 800 gms – mixed dried fruits
- 450 gms – minced fruits
- 1 tbsp. – finely grated orange rind
- ½ cup – orange juice
- 1/3 cup – brandy
- 250 gms – unsalted butter (melted)
- 1 cup – brown sugar
- 2 cups – plain flour
- 1 cup – self-rising flour
- 2 ½ tsp. – mixed spices(nutmeg, cinnamon, etc.)
- 4 eggs – whisked lightly
- 1 cup – almonds, blanched
- 2 tbsp. – apricot jam, warmed
- Non-stick baking powder
- Melted butter – to grease
METHOD :
- To begin with, preheat the oven at 150 degree centigrade
- Now grease a 22cm cake pan with melted butter and line its base with the non-stick baking paper along with the sides, extending 5cm above the pans edge
- In a large saucepan, combine the dried fruits, orange rind, orange juice and minced fruits over medium heat and cook, stirring for about 10-12 minutes or until the fruits soften
- As the fruits have cooked, remove the pan from heat and set aside till its cooled and then add brandy to it and stir well
- To this mixture, add butter and sugar and stir well
- Now combine the flours and spices and mix well
- To this mixture, throw in whisked eggs and combine well
- Now pour the batter in the greased cake pan and lightly tap the pan on a flat surface to settle the batter
- Before baking, decorate the top with some almonds
- Now set the cake to bake in the preheated oven for about 3 hours and 10-15 minutes or until a knife comes out clean after pricking it’s centre
- Once the cake is done, remove it from the oven and brush the warm cake with the apricot jam
- Now cover the cake with a silver foiland wrap the cake with a large kitchen towel to set aside overnight so it absorbs all the flavours and cool off completely
