INGREDIENTS :
- Rice – 1 cup
- Milk – 3 cups
- Jaggery – 1 cup, crushed
- Condensed milk – ¼ cup
- Cardamom – 1 tsp.
- Cashew & almond – ¼ cup finely chopped
- Ghee – 1 tsp.
- Lemon yellow food colour – 3 drop
- Saffron – a pinch
- Dried fruits
METHOD :
- First soak rice for one hour and grind into a smooth paste later
- Now boil some milk in a vessel and while its boiling, add the ground rice, jaggery and condensed milk to the boiling milk
- Keep stirring till it thickens, it thickens in no time
- Now add cardamom powder and stir well, turning the flame to simmer
- While that’s simmering, in another pan stir-fry dried-fruits in ghee
- Once the dried-fruits turn golden-brown, add it to the rice kalakand that is on simmer
- Now mix some food colour in a small bowl with 2 tsp. milk to prepare the saffron milk
- Add this saffron milk to the rice kalakand and give it a good mix, this adds intense flavour
- Now turn off the stove and let it rest for sometime
- Refrigerate your delicious rice kalakand for two hours
- Serve cold!
