Ingredients:
Vanilla Cupcakes
1-2/3 cup all-purpose flour 1 1/2 teaspoon baking powder 1/2 teaspoon salt 1 large egg 1/4 cup sour cream 3/4 cup milk 2 teaspoons vanilla essence 1 cup granulated sugar 1/2 cup unsalted butter melted and slightly cooled
Buttercream Frosting
3/4 cup unsalted butter 3-4 cups confectioners sugar 2 teaspoons vanilla essence 3 tablespoons milk Pinch of kosher salt
How to Make?
Vanilla Cupcakes
Preheat microwave oven to 350 degrees F. Line a cupcake pan with 12 liners.
Whisk flour, baking powder and salt together in a bowl.
Whisk sugar and melted butter until smooth (mixture will be gritty) in another bowl. Then whisk in eggs, sour cream, milk and vanilla essence until they are completely blended.
Gradually add in dry ingredients and beat until thoroughly incorporated. The batter should become thick.
Fill cupcake lines, around two-thirds of the way full. Bake in the oven for 20 minutes or until a toothpick inserted in the centre comes out clean.
Cool them before you do the frosting.
Vanilla Buttercream Frosting
Beat butter at medium speed until smooth and creamy for 2-3 minutes.
Combine confectioners sugar, vanilla and milk and mix them in high speed for 3 minutes until you get a decent consistency.
Now you may frost cooled cupcakes using a piping bag.
